QUICK (AND EXCITING!) Chicken Pesto Pasta
This is tasty and easy - my two favourite things! (Oh and of course healthy!). It has lots of yummy veg and you get to use all 4 stove elements at once which does make me feel quite impressive (and my heart race a tiny bit)!
It's loosely based on a recipe taken from the Deliciously Ella cookbook Deliciously Ella. Ella is great, and I often refer to her cookbook, so highly recommend you check her out! She made her pesto from scratch, but I decided to buy mine this time. And I also added in some chicken as my husband tends to complain if I do too many meat-free recipes in a week!
You will need
500g penne pasta (try a wholemeal one!)
Tub of fresh pesto (or you can make your own if you want to!)
1 head of broccoli
1 1/2 cups of peas
2 free range or organic chicken breasts
Olive oil for cooking
Sea salt and freshly ground black pepper
Cook the pasta according to the packet instructions.
Chop the courgettes into thin slices and the broccoli into bite-sized pieces. Sauté with some olive oil, salt and pepper for 5-7 minutes until cooked.
Cut the chicken breast into bite size pieces and stir fry with a little olive oil until cooked.
Whilst they are cooking put the peas in a saucepan of cold water and cook them until the water boils, then drain them.
When the pasta is ready, drain and mix together with the pesto and vegetables and chicken.
And yes, it is really as easy as that!
