Balmoral luscious Lunch-box Balls (V2!)
I recently updated my earlier lunch-box balls recipe, to my own version based on ingredients you are more likely to find in your local supermarket (except cacao - you still gotta visit your health food store for that!). This recipe appeared in my son's school newsletter, and they went down a treat with parents and children alike at Balmoral school, so I thought it only right to share with all of you here also!
The recipes are very similar, and the process is exactly the same. But I wanted to show you how easy it is to use any ingredients that you have lying around the house. Don't be afraid to throw any old thing in there, within reason of course!
You will need
1 cup of almonds
8 fresh medjool dates, pitted
1/2 cup raw cacao powder*
2 tablespoons chia seeds
2 tablespoons sesame seeds
1/4 teaspoon vanilla
2 tablespoons water
Desiccated coconut for rolling in (optional)
*cacao powder is raw chocolate and is one of those superfoods that you may have to travel to your nearest health food shop to find. It's definitely worth tracking down, and even though its more pricey than cocoa powder you can feel all glowy in the knowledge that it is the highest antioxidant food on the planet! Blend the almonds in a food processor until fine, then add the rest of the dry ingredients (except coconut) and continue to blend until all the dates have disappeared and the mixture is fine (a couple of minutes).
Add the vanilla and water and continue until they start to form a dough. Add more water if required to make it sticky.
Roll into medium sized balls and then coat with the coconut! Makes around 16 balls depending on the size you go for. Easy-peasy!
