"Is this really Cauliflower?" Salad
As far as vegetables go, cauliflower is pretty near the bottom of my favourites list. In fact I'm not even sure its in the first 3 pages.
The problem is that it's so darn good for you! With all its cruciferous vegetable-ness, being all jam-packed with antioxidants and phytonutrients that can protect against cancer and other nasties. What's a woman trying to be healthy to do? Well, that is all behind me now I have I found this recipe!
It's light and feathery, super easy to make, and you will definitely be asking yourself is this really cauliflower?

You will need
1 small-medium cauliflower (700g)
A squeeze of lime juice
50g roasted, unsalted peanuts, coarsely chopped
20 g sunflower seeds
Coriander or mint leaves
For the dressing
1/4 clove of garlic
Pinch of sugar
1 teaspoon freshly grated ginger
1 1/2 tablespoons rice vinegar
1 1/2 tablespoons toasted sesame oil
1 tablespoon tamari soy sauce
Pinch of dried chilli flakes (optional)
Salt and freshly ground pepper
To make the dressing: Crush the garlic with a pinch of salt and sugar, then combine with the ginger, vinegar, sesame oil and tamari, chilli flakes (if using) and a grinding of pepper. Mix thoroughly. I find the best way to do this is to shake it all up in a jar.
Trim away the leaves and most of the stalk of the cauliflower and cut the florets into small pieces. Put them in a food processor and process until they are very finely chopped and look like fluffy white grains.
Put the cauliflower into a bowl or serving plate and trickle over most of the dressing. Give it a squeeze of lime and scatter over the peanuts, seeds and mint or coriander. Spoon on the remaining dressing and serve.
Yup, its as easy as that, and it really truly is delicious! Another great one for lunches - make it on a Sunday to serve up during the week.
