Scrumptious Lunch-box Balls


Sometimes it's hard to find a winning formula for those school lunch-boxes. Food packed with motherly love and hope goes to school.....only to make an unplanned return journey back from school. It can be a bit disheartening! But these little healthy, energy-giving and irresistible gems are guaranteed to be consumed! (Only trouble is you will get lots of little hands trying to sneak them out before breakfast!)

There are endless variations of these (try searching online for 'bliss balls', 'brain balls', 'energy balls', 'amaze balls'). So if you don't have some of the ingredients below go with what you have in the cupboard and develop your own tasty treat!).  This recipe is taken from the lovely Dr Libby Weaver, who has written some fantastic books definitely worth reading, and has a delightful cookbook called Real Food Chef.

You will need

1 and 1/2 cups walnuts
1/2 cup raw cacao powder*
1/4 cup whole linseeds (aka flaxseeds)
1/4 cup sesame seeds
Pinch of salt
8 fresh medjool dates, pitted
1/4 teaspoon vanilla
2 tablespoons water 
Desiccated coconut

*cacao powder is raw chocolate and is one of those superfoods that you may have to travel to your nearest health food shop to find.  It's definitely worth tracking down, and even though its more pricey than cocoa powder you can feel all glowy in the knowledge that it is the highest antioxidant food on the planet! Here's how

Put all the dry ingredients in a food processor (except the coconut) and blend, then add the vanilla and water and continue until they start to form a dough.

Roll into medium sized balls and then coat with the coconut!  Makes around 16 balls depending on the size you go for.  Easy-peasy!

I pop mine in the freezer and take one out each day for my son's lunch box, sometimes two if I'm feeling nice!  (And of course I often take one out for me to snack on as well, but that's just between us!)
