Sweet and Cosy Winter Warming Soup
I am so proud to say that this is my own actual recipe that I made up without anyone telling me how. Okay really its because I meant to follow a recipe but I didn't have the right ingredients, so I just put some other stuff in that seemed similar. But it turned out to be delicious. And easy. And proving that necessity really is the mother of all invention! Root vegetables are so sweet and satisfying, and this soup is all you need to keep you going on those chilly winter days. |
You will need
A knob of butter 1 Tablespoon of olive oil 2-3 leeks, washed and finely sliced A few sprigs of fresh thyme, leaves only 1/2 squash, peeled and diced 3 sweet potatoes, peeled and diced 1 potato 1.5 litres of vegetable stock Handful of fresh oregano (or use a couple of teaspoons of dried oregano if you don't) Tin of cannelloni beans, rinsed Coriander leaves (feel free to use whatever vegetables and herbs you have if you don't have these!) Here's how Heat the butter and oil in a large saucepan over a medium heat. Add the leeks and thyme and cook gently until soft - about 10 minutes. Add the squash, sweet potatoes, potato, stock and oregano. Bring to the boil and simmer for 15mins. Remove from the heat, allow to cool for a bit and blend until smooth in a food processor or blender. Return to the heat when you are ready to eat and add the cannelloni beans for some extra protein. Add some coriander leaves when serving. Hmmm sweet, warm, delicious! |
